I can ssh to my server from work no problem.
However my sessions disconnect me with an idle timeout after a few minutes. Is there setting I can configure to have it not disconnect idle sessions?

Yes, there is default idle timeout set to 5 minutes.
You can disable this by setting the parameter idle_timeout = 0
